Think Thin: It’s my brother’s birthday and he asked me to bake him a red velvet cake. Now between the flour, the butter, the sugar and the astonishing amount of cream cheese frosting, I decided I would bake-up a healthy recipe for ourselves. Here it is!
Cake: 1/4 C greek yogourt (if using applesauce cut sugar by a 1/4 C), 1 C sweetener, 2 tbsp honey, 4 egg whites 5 tbsp cocoa powder,4 tbsp red food coloring, 1 C almond milk (with 1 tbsp lemon juice), 2 C all purpose flour, 1 tsp baking soda, 3 tsp white vinegar.
Directions: Beat egg whites to soft peaks. Cream yogourt, sweetener, and honey. With a spoon fold the yogourt mixture with the egg whites. - Set aside - Mix cocoa, red food coloring, 2 tbsp water until you get a thick paste, add to the egg whites batter. Blend slowly while adding half of the almond milk, half the flour and proceed with the other half when batter is well combined. Add baking soda and vinegar and beat at high for a few minutes.
Bake at 350 for 25-35 minutes.
Total calorie cake : 1100 or 110 calories for one piece.
Frosting: 250 gm of cream cheese softened, 1 fat-free vanilla pudding packet, 1 tbsp lemon, 2 tbsp almond milk, 1/2 sweetener, 1 tsp vanilla.
Directions: Beat on high until it looks frosty !
Total calorie frosting : 650 or +65 calories for one slice of cake.
Total for one piece: 175 calories

I can’t say enough about this soup. It’s sweet, it’s spicy, it’s comforting. I’ve made it twice in as many weeks, and since it makes four servings per batch, I’ve actually eaten the soup on eight separate occasions. Hell, I dream about this soup, it’s that delicious.

Okay guys, this recipe is not vegan, BUT because it would make a fucking delicious dish for Thankgiving and I’m considering making it, here’s how to veganize it:

- Use instead of ricotta homemade cashew cheese (find recipes in my cashew cheese tag!)
- Use instead of goat cheese sliced Vegan Gourmet Jack cheese.
I swear it tastes exactly like amazingness. In fact half the reason I am so excited to go home for Thanksgiving is because I get to buy some and use it like fucking crazy.

I FEEL TERRIBLE.
I’ve been extremely busy these past few days, running all around NYC and sleeping barely 3 hours before I’m off to do something else.
I feel really crappy, especially after watching my sleeping habits for the last few weeks.
Tomorrow is a day for fitness. I’m going to the gym to do the elliptical for at least 40 minutes, I’ll do the weight machines, and then the bike.
When I come home I’m going for a run around the park by the zoo, and then doing a few of the turbofire workouts—I’m thinking abs, core, then cardio?
All I know is that I need to make up for this lost time.
I’ll be living by this from now on.
